"Sober curious" - I'm sorry, but this is just the silliest name, and it will never ever be in my lexicon.

All of us have been sober at some time in the past!

More, you lump a large group of completely disparate people into this term.

For example, for no apparent reason I stopped drinking almost entirely in late 2019. I had always had a little alcohol each day - half a beer or a single beer usually - but for no reason, I just lost interest.

Strangely, I still drink socially, but the number of times I've done that in the last year is something like three.

(We have a bottle of champagne in the fridge for when Trump is forced out of office or dies, and you had better bet I will richly enjoy that bottle.)

Glueing together "alcoholics who need to quit or die", "regular drinkers who decide to cut down for their health", and "infrequent drinkers who decide to quit altogether" is neither accurate nor useful.
